The Curry Base Set provides the essential structural elements for any sauce, starting with the thick, aromatic body provided by coriander and cumin, and finishing with the complex, warming signature of our artisanal Garam Masala. It is the toolkit for those who understand that a great curry isn't made; it is built.

Most curry sets are a random assortment of spices. The Diara Curry Base is Ratio-Calibrated. We have selected these five specific powders because their essential oil profiles are complementary. When cooked together, they emulsify into the aromatics (onions, ginger, garlic) to create a cohesive, velvety base rather than a split sauce.

1. Coriander Powder (100g): Double-sifted for a fine, citrus-forward body.

2. Turmeric Powder (100g): High-curcumin variety for a rich, sun-baked golden hue.

3. Chilli Powder (100g): Sharp, pungent heat to cut through the richness of fats.

4. Cumin Powder (100g): Heavy, earthy notes to provide the "bass note" of the gravy.

5. Garam Masala (100g): A sophisticated blend of 12+ whole spices, ground for a long-lasting aromatic finish.

Molecular Emulsification. Our powders are milled to a specific 60-mesh particle size. This precise fineness is critical for "Curry Bases" because it allows the spice particles to suspend perfectly within the fats (ghee/oil) and liquids, preventing the "gritty" texture often found in unrefined commercial powders.

NOSE

A dense, heavy bouquet. The initial hit of bright, floral coriander is grounded by the deep, toasted scent of cumin and the lingering, sweet-savory spice of cloves and cardamom from the Garam Masala.

PALATE

Full-bodied and savory. It provides a savory "Umami" foundation that carries the heat of the chilli and the medicinal warmth of the turmeric through to a long, complex finish.

COLOUR

A rich, autumnal transition from Burnt Ochre to Deep Chocolate and Sandy Gold.
