The Biryani Edit is designed to manage the two distinct phases of a perfect Biryani: the high-aroma infusion of the grains and the deep, savory character of the yakhni or gravy. It is a toolkit for those who treat Biryani not just as a meal, but as a technical pursuit of fragrance and colour.

Includes : 

1. Biryani Masala Powder (100g): A heavy, complex blend of 15+ spices, sieved for deep flavor penetration.

2. Kashmiri Chilli Powder (100g): For the signature vibrant red oil (roghan) without overwhelming heat.

3. Garam Masala Powder (100g): The final "finish," ground for immediate aromatic release upon opening the dum.

4. Whole Garam Masala Mix (50g): A selection of premium whole cardamom, cinnamon, and cloves for rice infusion.

5. Black Pepper (100g): High-piperine Malabar pepper for a sharp, woody bite that cuts through the richness.

Most Biryani kits rely on a single "all-in-one" powder. Diara provides a Stratified Flavor System. By separating the whole botanicals (for the rice) from the high-pigment Kashmiri Chilli and our proprietary Biryani Masala, we allow the chef to control the visual "glow" and the aromatic "peak" independently, ensuring the rice remains pearlescent while the meat remains deeply flavorful.

We ensure that the "top notes" (the scents you smell when you lift the lid) are preserved through moisture-locked stabilization, while the "base notes" (the flavor that stays on the palate) are achieved through our high-precision milling process.

NOSE

A regal, intoxicating bouquet. It leads with the sweet, cool scent of green cardamom and cinnamon, followed by the heavy, peppery warmth of whole spices and the savory, complex depth of the toasted masala.

PALATE

An evolving experience. It starts with a floral, sweet-spice top note, transitions into a mid-palate of earthy, savory richness, and finishes with a clean, sharp heat from the black pepper.
